Mother Rucker’s Sweets Cookie Brittle

Wow factor: This all-natural cookie is a delectable hybrid: Like shortbread, it’s loaded with butter; but texturally, it’s altogether different — crunchy, like a crisp cookie. Company co-founder Karel Rucker says that the Lemon Cookie Brittle is especially popular in Texas. It’s fantastic spread with goat cheese, and pairs beautifully with a glass of prosecco, dessert wine or a cup of tea. It also makes a good accompaniment to sorbet or ice cream.

Vitals: $5.99 for an 8-ounce box. The other four cookie brittle flavors are almond, cinnamon, cocoa and the just released buttermint. The cookies are also included in gift sets, which the company sells online.

Back story: Before the cookie-business bug bit her, Rucker was an avid baker and a business development manager for a consulting firm. She quit the consulting biz and partnered with a business colleague, Greg Raynes, to launch Mother Rucker’s Sweets in Fort Worth in 2006.
