MAKES 7 SERVINGS; PREP:10 MINS; FREEZE: 1 HOUR
TIP: Unwrap hard candies and place in a large zip-lock bag. Seal the bag leaving 1/2" on one end unsealed (this allows for air to escape).
Spread the bag flat on the counter and using a rolling pin or bottom of a small pan crush your candies while in the bag. Pour candies out on a large plate. Set aside.
TIP: The easiest way to make homemade ice cream sandwiches is to choose an ice cream that comes in a box, one that you can unwrap completely and cut to size.
Cut ice cream in 1/2” thick slices. Lay a slice flat on your work surface and using a 2" round cookie cutter, punch out ice cream circles. You can cut ice cream with a knife if you don't have a cookie cutter.
Work quickly and place an ice cream circle on the flat side of one cookie and top with another cookie. Press ever so gently. Roll the ice cream edge of the sandwich through your crushed candies. Viola!
Place assembled sandwiches on a tray and chill in the freezer until firm and then they are ready to eat. To enjoy later -wrap each sandwich in clear plastic wrap and return to freezer.
